When you are buying whipped cream canisters you are actually buying two things – the whipped cream dispenser, which is a pressure vessel where the gas and the cream are combined and the cream chargers, which is a small cylinder of nitrous oxide.

Make sure the two components are compatible – particularly if you are purchasing online. Some brands (in particular Kisag) do not make components that are compatible with other brands of. Liss, Best Whip, Erotica Cream and many of the others use a uniform style of fitting and are completely interchangeable.

You can obviously also buy  whipped cream canisters that are pre-filled – but these are entirely different beast, they cream contained within them is ultra heat treated and it’s texture and flavour are not in the same league as fresh cream hand whipped.
